Eggs in a sheet pan with Vegetables and Parmesan Recipe

Time to Cook: 15 minutes
Ingredients:
- 12 big whisked eggs;
- salt; pepper
- 1 small red pepper
- 1 tiny yellow onion
- 1 cup each of diced mushrooms and zucchini
- 1 cup each of freshly grated parmesan cheese
Instructions:
1. Grease a rimmed baking sheet with cooking spray and preheat the oven
to 350°F.
2. In a bowl, whisk the eggs with the salt and pepper until foamy.
3. Fully include the peppers, onions, mushrooms, and zucchini.
4. Spread the mixture into an even layer and pour it onto the baking
sheet.
5. Top with parmesan and bake for 12 to 15 minutes, or until the egg is
cooked through.
