Ingredients:
1 big egg, beaten well
2 ounces pork rinds
4 boneless chicken breast halves (approximately 12 ounces each)
4 slices deli ham
4 slices Swiss cheese
14 cup almond flour
14 cup shredded parmesan cheese; and 1/2 teaspoon garlic powder
2 cups of cauliflower florets
Salt and pepper
Instructions:
1. Set the oven to 350 degrees Fahrenheit and cover a baking sheet with foil
2. Put pieces of paper between the chicken breast halves and pound them flat
3. Arrange the pieces and add cheese and gammon slices on top
4. After dipping in the beaten egg, roll the chicken around the contents
5. In a food processor, blend the pork rinds, almond flour, parmesan, garlic powder, salt, and pepper into fine crumbs
6. Place the chicken rolls on the baking sheet after rolling them in the pork rind mixture
7. Add the cauliflower to the baking pan after tossing it with melted butter
8. Bake the chicken for 45 minutes, or until it is well done
