Tikka Chicken and Cauliflower Rice Recipe

Ingredients: 

  • 2 pounds of chopped boneless chicken thighs
  • 1 cup of heavy cream
  • 1 cup of canned coconut milk
  • 3 tablespoons of tomato paste
  • 2 tablespoons of garam masala
  • 1 tablespoon of fresh grated ginger
  • 1 tablespoon of minced garlic
  • 1 tablespoon of smoked paprika
  • 2 teaspoons of onion powder
  • 1 teaspoon of guar gum
  • 1 tablespoon of butter
  • 1 1/2 cups of riced cauliflower

Instructions: 

1. Distribute the chicken in a slow cooker, then mix up all the other ingredients — excluding the cauliflower and butter — before adding the chicken. 

2. Cook the chicken covered for 6 hours on low heat, or until it is done and the sauce has thickened. 

3. In a saucepan over medium-high heat, melt the butter.

4. Add the riced cauliflower and simmer for an additional 6 to 8 minutes, or until soft. 

5. Combine the cauliflower rice with the chicken tikka.
