Fish and Zucchini Grilled with Mango Sauce Recipe

Ingredients:
- 4 (6-ounce) boneless salmon fillets
- 1 tablespoon olive oil
- Salt and pepper
- 1 big zucchini cut into coins
- 2 tablespoons of fresh lemon juice
- 1/2 cup of mango diced
- 1/4 cup of fresh cilantro chopped
- 1 teaspoon of lemon zest and 1/2 cup of canned coconut milk
Instructions:
1. Spray cooking spray liberally on a grill pan and heat it to high heat.
2. Sprinkle salt and pepper over the fish after brushing it with olive oil.
3. Add salt and pepper and toss the zucchini with lemon juice.
4. Arrange the zucchini and salmon fillets on the grill pan.
5. After 5 minutes, flip everything over and cook for a further
5 minutes.
