Spring Vegetable Salad with Shredded Parmesan Recipe

Ingredients:

  • Three slices of raw bacon
  • Two tablespoons of red wine vinegar
  • One tablespoon of Dijon mustard
  • Salt, and Pepper 
  • 4 ounces of mixed spring greens
  • 1/2 thinly sliced little red onions 
  • 1/3 cups toasted pine nuts 
  • 1/4 cups grated parmesan; to taste liquid stevia extract 

Instructions: 

1. Bacon should be pan-cooked until it is crispy. After that, drain it on paper towels. 

2. Cut the bacon after removing 14 cups of the bacon fat from the pan and throwing the rest away. 

3. Combine the mustard and red wine vinegar in the skillet. 

4. Add stevia to taste after seasoning with salt and pepper, then leave the dish aside to cool a little.

5. In a salad dish, combine the spring greens, red onion, pine nuts, and parmesan. 

6. Combine with the dressing and serve with bacon crumbles.
