Cinnamon Protein Pancakes:
Protein Pancakes with Cinnamon

Ingredients:
8 large eggs,
1 cup canned coconut
milk
1/4 cup coconut oil
and 2 scoops (40g) egg
white protein powder
1 teaspoon vanilla
extract
1/2 teaspoon ground
cinnamon
1/2 teaspoon ground
nutmeg
and, to taste, liquid
stevia extract
Instructions:
1. In a food
processor, combine the eggs, coconut milk, and coconut oil.
2. Add the remaining
ingredients after giving the mixture several pulses.
3. Mix until combined
and smooth; taste and adjust sweetness as necessary.
4. A nonstick skillet
is heated to medium-high heat.
5. Pour the batter in,
reserving about 14 cup for each pancake.
6. Heat the batter
until bubbles appear on the surface, then carefully turn.
7. Let the pancake to
cook till the bottom is browned.
8. Do the same with
the remaining batter and transfer to a plate to keep warm.
